Manager advised that potatoes were placed for hot holding 30 minute prior. Manager placed on time. Corrective Action Taken

Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed brisket cooling for 45 minutes at ambient temperature with a temperature of 105F. Manager placed brisket in Reach in Cooler Corrected On-Site
