Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At 3:05pm pizza sauce 52F ambient cooling for 40min to 52F at 3:30pm. At this rate proper cooling to 41F in 4 hours will not occur. Observed unit cooling in warm ambient environment. Operator placed pizza sauce in ice bath to rapid cool. Corrective Action Taken
