High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. 1.) Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Salad Station: fresh mozzarella, cut lettuce, spring mix, feta cheese all Cold Holding at 3:20pm.Per operator, over 4 hrs. Observed ambient temperature of unit at 67°F. Advised operator to not store any TCS foods in unit until it can maintain at 41°F and below. Operator has technician on site now for repairs. 2.) Observed Ham, provolone cheese, capicola ham, shredded mozzarella, butter sticks, tiramisu cake, cooked pasta, mozzarella logs, mascarpone cheese, ricotta cheese, chicken stock, pasta fagole, arugula, spring mix, milk all Cold Holding at 47-52°. Per operator, items held in unit overnight and not moved. Operator stated noticed temp was out earlier today and called technician. Observed ambient temperature of unit at 41°F and below. Warning
