High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. raw fish (48°F - Cold Holding) in plastic cooler with ice bags, per employee fish was just thawed out and was thawing out less then two hours prior, fish moved to walk in freezer. milk (47°F - Cold Holding); shredded cheese (46°F - Cold Holding); cut cabbage (45°F - Cold Holding) in large standing reach in cooler on server line, per employee doors have been constantly opened for approximately three hours, employee turned down temperature of cooler. Corrective Action Taken Repeat Violation Admin Complaint - From follow-up inspection 2021-11-29: Cheesecake (48°F - Cold Holding); shredded cheese (55°F - Cold Holding); cut cabbage (56°F - Cold Holding); crab cake stuffing (56°F - Cold Holding); stuffed mushrooms(55°F - Cold Holding) in large reach in cooler at wait station and per employee all items have been cooler since the previous day. High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. melted butter (107°F - Hot Holding) on table on cook line, per employee butter was melted and let on table no more then two hours prior, butter reheated to 165°F. fried okra (119°F - Hot Holding) in pass through window, per employee okra has been there for less then one hour, okra reheated to 165°F.
