High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In the under counter cooler in the sushi station there is one 8 ounce portion of commercially reduced oxygen packaged tuna that is marked to be removed from packaging before thawing still in the reduced oxygen package.

In the top of the make table cooler in front of the deep fryer lobster (45F - Cold Holding); shrimp (46F - Cold Holding). Operator states that shrimp and lobster have been in the cooler less than 4 hours, operator iced the shrimp and lobster. Corrective Action Taken
