High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the pizza station pizza sauce (48F - Cold Holding). Operator held the pizza sauce out during the lunch rush, less than 4 hours. Pizza sauce moved to walk in freezer for rapid cooling. In the upright cooler by the range cooked beef (47F - Cold Holding); pepper corn sauce (48F), operator moved contents to walk in cooler.
