Rice, hotdogs, cooked chicken, cooked pork, cooked steak, cheese, raw pork, raw shell eggs, cooked beans, fries, raw beef and butter packets (45-51F - Cold Holding), as per employee manager brings items over in the morning from his truck and set it up. Manager arrived and said all food is stored at commissary reach in cooler at end of night and brought back in the morning to food truck. Manager said food was brought from commissary today around 10am and place in food truck reach in cooler. No power available overnight for food truck and in the morning they put generator on and start the reach in cooler. No TCS foods as per manager is stored in food truck overnight due to no power. Reach in cooler ambient temperature drop from 47F and reached 42F but rises at times due to in and out of unit. Door close tight and operator will turn on unit much earlier to ensure reach in cooler at proper temperature for TCS food being stored Corrective Action Taken Warning
