High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed line cook touch raw egg mix and switch tasks to handling fully cooked omelette without changing gloves. Instructed operator to change gloves. Corrective Action Taken

Basic - Equipment and utensils not properly air-dried - wet nesting. Pans wet nesting on drying rack, not properly air drying.

High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Quaternary sanitizing solution at 3 compartment sink not at minimum ppm requirements per inspector and operator test strips. Manager called for repairs during inspection. Alternate sanitizing solution of bleach present and meeting proper ppm requirements.

High Priority - Toxic substance/chemical improperly stored. Stainless steel polish/cleaner stored on rack with sugar. Operator moved and properly stored cleaner. Corrected On-Site
