High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach-in cooler on make line: Tzatziki at 56f for 2 hours, burgers 58f for 2 hours. Operator turned down cooler and placed ice bucket in cooler to help cool down unit. Corrective Action Taken Repeat Violation

Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Reach-in cooler on make line is in disrepair, evident by duct tape holding gaskets onto doors. Reach-in cooler is not holding food cold, ambient air in cooler is 54f. Operator filled container with ice to and placed inside until to help keep unit cold.
