In dishwashing area, observed employee switching from handling dirty to clean dishes with a five second rub during handwash between. Observed this occurring twice. Spoke with manager regarding proper handwashing times. Warning

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishwasher (Temperature 153F) after running multiple times during use to check temperature.
