Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed a knife handle in contact with shredded cheese on the make line. Operator removed it. Corrected On-Site

Observed no proof of employee food training on site. Owner stated that binder is at his house.
