During the inspection employee primed dishwasher Dishwasher (Chlorine 100ppm). Corrected On-Site

Observed raw chicken (58F - Cold Holding); chopped lettuce (50F - Cold Holding); hash brown (52F - Cold Holding) located at reach in cooler drawers under cookline, less than 4 hours. Advised Manager to submerge food containers in ice and lessen the amount of hash browns to maintain temperatures at +or- 41F and below. Corrective Action Taken Repeat Violation

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the preparation area observed butter (46F - Cold Holding); as per manager for less than 1 hour. Employee transferred butter to the walk in cooler for a rapid cool. Corrective Action Taken

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On the flat grill in a container observed sausage (101F - Hot Holding), as per chef for less than 2 hours, employee reheating sausage. Corrective Action Taken

High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed QT sanitizer exceeded 400 ppm. Manager added water to lower solution to 200 ppm onsite.
