Observed in the reach in cooler next to the flat grill cheese (50F - Cold Holding), as per manager for less than 1 hour. Manager transferred cheese to inside the cooler to rapidly cool. Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee cellphone stored over to go food wrapping papping paper in the cook line. Employee removed cell phone and manager discarded first layer of paper in contact with the phone.
