Observed cheese (52F - Cold Holding) above containers at top of preparation reach in cooler at cook line. As per operator, less than 2 hours. Advised operator to place item inside reach in cooler.

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed black beans (109F - Hot Holding) at steam table at front counter. As per employee, for approximately 10 minutes. Employee took item to reheat to 165F. Corrective Action Taken
