Upon inspection observed and recorded hot holding temperatures for spicy chicken 125f and chicken thigh 118f. Chicken was placed on line per manager at 8:30 AM. Manager discarded food of concern on own accord. Manager noticed hot holding well was not at a lower setting and increased temperature during inspection. Another batch of chicken cooked -chicken breast 177f and chicken thigh 185f. Corrective Action Taken
