High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. #1: Observed raw salmon over milk and sauce bottles in walk-in cooler. Operator reversed. #2: Observed raw chicken being stored on a plate balanced on top of an uncooked vegetables metal pan in flip top cooler closest to kitchen wall. Operator moved raw chicken to reach-in cooler below. #3: observed raw steak being stored over white rice in reach-in cooler under flip top previously mentioned. Operator moved raw steak to a lower shelf. Emailed operator Safe Storage Flyer. Corrected On-Site

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. #1: raw chicken (56°F - Cold Holding); cooked beef (57°F - Cold Holding) Observed a plate of raw chicken and a plate of cooked beef sitting on top of metal pan inserts that were holding uncooked vegetables. The lack of airflow to the container as well as plastic containers will not allow for the items to reach below 41°F. Operator moved items into reach-in cooler below. Corrective Action Taken
