Operator states less than 1 hour. Operator reheated items to 165°F and turned temperature gauge up. #2: roasted chicken (126°F - Hot Holding) Observed in hot box in kitchen. Operator states less than 1 hour. Operator reheated items to 165°F and turned up temperature in hot box. Corrected On-Site
