The following proviso is notated on application approved on 9/23/24: 2) Smokers/grills are limited to bulk, slow cooked, closed cooking only. No other food preparation and/or short order cooking is permitted. Final preparation of smoked meats must be done inside the fully enclosed establishment. Bulk cooking is long-term cooking or reheating of large sections of meat or poultry that does not require frequent handling or contact. No food preparation tables, cutting boards, or other equipment shall be located outside near the smoker/grill in an unprotected environment. Outdoor smoker shed must be fully enclosed with smooth, non-porous, durable, and easily cleanable floors, walls and ceilings with a properly functioning hand sink with cold and hot water to allow for any food prep to be performed.
