Basic - Dead roaches on premises. Observed 2 dead roaches on the ground in dry storage area.

Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. In chicken at makeline, handle part of scoop touching chicken. Person in charge removed. Corrected On-Site

High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee rubbed exposed ears with bare hands then continued to do food preparation without washing hands.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. mozzarellas (44°F - Cold Holding) in reach in cooler on make line, per employee mozzarellas was sitting out on counter for less then 30 minutes while being panned up, mozzarellas moved to walk in cooler.
