High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed container of beef on the server lien at 118F hot holding, and steak at 109F in hot box.Manager advised that it had been reheated 30 minutes prior. Manager removed tray and had items reheated to 170F. Corrected On-Site

High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed hose Bibb with hose under dishmachine with no vacuum breaker

Intermediate - Handwash sink used for purposes other than handwashing. Observed hand wash sink by dishmachine with steel wool pads in the hand wash sink

Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dishmachine not operating. Manager advised that new dishmachine is on order and will be delivered in the next few days. Currently using three-compartment sink at theater across the isle.
