2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed employees donning gloves without washing hands prior. Observed employee changing tasks (washing dishes to pulling food from the oven) without washing their hands.
COS: Stopped employees and directed to wash their hands. CA: Educated PIC on when to wash.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed that the CSFM posted to have expired in 05/2025. PIC unable to provide an up to date Certified Food Safety Certificate.
RCA: A CFSM certificate which has expired, been revoked or suspended shall not be posted in the food service establishment. An up to date Certified Food Safety Manager must be obtained within 60 days.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink by the prep top cooler to have pizza pans stacked on top, blocking the hand washing basin. CA: PIC removed items blocking the hand sink.
