6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cheesecake and butter stored in a display cooler between 45-52 degrees F. Advised PIC that cold TCS foods must be held at or below 41 degrees. PIC voluntarily discarded affected foods.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Equipment food contact surfaces shall be clean to sight and touch. Observed accumulation of slime on baffle of ice machine. Advised PIC that food contact surfaces must be kept clean to sight and touch. PIC emptied ice machine to begin cleaning.
18 - insects, rodents, and animals not present
The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by:
- Routinely inspecting shipments of food and supplies;
- Routinely inspecting the premises for evidence of pests;
- Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this rule. Observed insect activity during inspection. Advised PIC to continue pest control services and deep clean storage areas and equipment to eliminate potential harborage areas.
