(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and Note: Observed sanitizer bucket to have a concentration of 0ppm QAC. PIC remade sanitizer to 200ppm QAC.

1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Note: Observed ceiling tiles to have accumulatio of dust and debris. PIC informed that new tiles and vents were on back ordered. PIC stated they would clean the dust and debris off ceiling tiles in the mean time until new tiles and vents come in.

511-6-1.04(4)(k) - In-Use Utensils, Between-Use Storage (C) (k)Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored:

1.Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container; Note: Observed handle of scoop in hot chocolate container with handle down touching the mix.
