(a) Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Pf Note: Observed no soap for handwashing @ hand sink in prep area. Each sink must be provided with a supply of hand cleansing liquid, powder or bar soap. PIC stated she would provide hand soap.

- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Note: Observed shield of ice machine with buildup of debris. Equipment food contact surfaces shall be cleaned to sight and touch. Instructed PIC to clean and increase future cleaning frequency.

Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P Note: Observed multiple containers of whole milk and buttermilk stored in RIC after expiration date. PIC discarded all expired items.

- Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor. Note: Observed bag of whole onions stored on the floor. Food shall be protected from contamination by storing the food @ least inches above the floor. Instructed PIC to relocate.

Insect control devices that are used to electrocute or stun flying insects shall be designed to retain the insect within the device.

Insect control devices shall be installed so that:
(i) The devices are not located over a food preparation area; and
(ii) Dead insects and insect fragments are prevented from contact with exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles. Note: Observed fly strips hung over food preparation area in main kitchen, PIC instructed to take strips down.

Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: Observed multiple surfaces in facility with soil accumulation. PIC instructed to clean all surfaces regularly.
