Observed active staff drinks in food handling and service (front line and cook line) in unapproved containers (soda/water bottles, travel mug). If staff drinks allowed in food service areas, they must be in single service cups with a lid and straw. Otherwise, they must be at designated staff break area out of food service area. COS. Drinks removed.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed main kitchen prep tables with paper lined + heavily rusted storage shelves. Remove paper and clean rust, remove or replace shelves with surfaces that are smooth, non absorbent, easily cleanable and durable. Complete by 9/14/25
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulations of grease, oils and/or food debris on floors under wire shelving in walk in units. Clean floors at a frequency to prevent accumulations. Ensure all shelves are at least 6" off floor to aid with cleaning.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(h) - dressing areas and lockers, designated and provided (c)
Repeat. Observed employee items (sunburn gel) in WIC. Store personal items in designated areas away from foods.
