6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Half & half and milk in reach in cooler 4 cold holding at temperatures above 41F. CA - All TCS (time/temperature control for safety) food must be cold held at temepratures 41F or below. PIC (Person in charge) discarded all TCS food items not cold holding at 41F or below.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Reach in cooler 4 is not in good repair and is not cold holding at 41F or below. Person in charge discarded all TCS food in reach in cooler 4. No TCS food shall be cold held in reach in cooler 4 until it has been repaired and is cold holding at 41F or below. Person in charge must send repair receipt to Barrow County Environmental Health Department. Reach in cooler air temp was at 54F.
