Observed raw tuna steaks stored above ready-to-eat sauces, pan of pasta salad touching a pan of raw oysters and raw eggs stored on top of beer kegs in the walk-in cooler. CA: Raw animal foods shall be stored separately from ready-to-eat/fully cooked foods to prevent contamination. COS: PIC relocated foods.
5-2 - consumer advisory provided for raw and undercooked foods

Observed no disclosure asterisk next to baked oysters on the menu and the baked oysters were cooked to 74F prior to being served. Per PIC, steaks can be ordered undercooked and are also missing the disclosure asterisk. CA: If an animal food is served undercooked, the permit holder shall notify consumers by way of a disclosure and reminder. The undercooked items will be identified by asterisking them to a footnote that states the items are served undercooked. COS: Baked oysters and steaks will be fully cooked until the menus can be edited to add an asterisk next to all undercooked items.

Observed sanitizer buckets stored in direct contact with sauce containers on dry storage shelf in the kitchen and directly above single-use utensils at the bar. CA: Toxic materials shall be stored so they cannot contaminate food, equipment, utensils and single-use articles by separation and locating the toxic materials in an areas that is not above food, utensils, equipment and single-use articles. COS: PIC relocated buckets.
