Observed improper cold holding of all potentially hazardous TCS foods in the reach-in cooler (see temp log). Per PIC, all foods were out of temperature for less than 4 hours. CA: Cold held TCS foods shall maintain an internal temperature of 41F or lower. COS: PIC moved foods to the reach-in freezer and placed some foods on ice to rapidly cool.

Observed improper hot holding of potentially hazardous TCS foods in the steam well and on the grill (see temp log). Per PIC, all food were out of temperature for less than 4 hours. CA: While hot holding TCS foods shall maintain an internal temperature at or above 135F. COS: Foods were rapidly reheated to at least 165F.

Observed hand wash sink completely filled with containers and dry storage items. CA: A handwashing sink shall be maintained so that it is accessible at all times for employee use; A handwashing facility may not be used for purposes other than handwashing. COS: Employee removed all items from hand sink.

Observed employee prepping food with no hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair. COS: Employee put hair restraint on.

Observed employee preparing food while wearing a watch. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: PIC will have employee remove watch.

Observed bottles and bulk container of remoulade sauce and bottle of mayo open without a date mark to indicate the opened or discard date. CA: Instructed PIC that if commercial sauce containers state "Refrigerate After Opening", with no additional statement that it's for quality only, then the open containers must be kept refrigerated and date marked to be used within 7 days. PIC stated he would discard the sauces.
