Observed pans of TCS foods cooling in covered containers in WIC. CA: Food items being cooled shall be loosely covered or uncovered to allow proper cooling to occur. COS: PIC uncovered pans of food.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed personal drink stored on prep table with single use articles. CA: Employee personal items shall be stored in order to prevent potential contamination of facility food or equipment. COS: PIC relocated employee drink.
