Observed containers of raw eggs stored above ready-to-eat foods in the reach-in cooler. CA: Food shall be protected from cross-contamination by separating raw animal foods during storage, preparation, and holding from ready-to-eat foods. COS: PIC moved raw eggs
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed strainer full of soy sauce stored in produce sink. CA: Produce sink is for washing fruits and vegetables only. COS: PIC moved sauces and sanitized veggie sink.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee phone stored on prep top. CA: Employee items should be stored in a designated area in a way that prevents possible contamination. COS: PIC had phone removed.
