Observed multiple employee drinks not in single service cups with lid or straw; single service cups without lid, or straw. CA: Employee drinks must be stored in a single service cup with a lid and straw in order to prevent potential contamination. COS: Reusable cups were removed from kitchen area.

Observed fryer equipment stored in handwash sink at chicken/fryer area. CA: Hand sinks are for hand washing only, and must be accessible/unblocked at all times for hand washing. COS: PIC removed fryer pieces to 3 compartment sink.

Observed tea nozzles not cleaned at a frequency necessary to maintain food contact surfaces clean to sight and touch. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC had nozzles cleaned.

Observed two packages of raw chicken tenderloins in walk-in cooler temping @ 95F. PIC stated chicken was on counter thawing and got too high so they moved to cooler. PIC could not confirm how long chicken was out of temperature for. CA: PIC discarded chicken and we discussed thawing methods.

Observed employee begin placing food in togo trays without hair restraint on. Employee removed gloves then went out of sight and reappeared with hair restraint on before prepping food again

Observed all potentially hazardous TCS foods improperly cold holding above 41F in the walk-in cooler (see temp log). Walk-in cooler door was open for the entirety of the inspection; ambient air temperature inside the walk-in was 60F. After closing the door and leaving it shut for 10 minutes, the ambient air temp dropped to 41F. CA: Discussed with PIC. All food was out of temp for less than 4 hours and was moved to the freezer or put on ice to rapidly re-cool.

Observed hand wash sink in the kitchen blocked and inaccessible for use; tall trash can and sanitizer buckets were stored in front of it. CA: PIC relocated items.

Observed employee personal items stored on prep table (purse and clothing). CA: Personal items were moved.

Observed potentially hazardous TCS food (sautéed peppers/onions) improperly hot holding below 135F (see temp log) in the warmer drawers. CA: Discussed with PIC. PIC discarded.

Observed potentially hazardous TCS foods (sliced tomatoes and sliced cucumbers) that did not cool to 41F within 4 hours after being prepped. At 3pm they were between 46F-51F. The label on the pans indicate they were prepped at 8am. CA: Discussed with PIC. Tomatoes and cucumbers were discarded. Discussed proper methods of cooling (single layer of pans, lids removed or vented).

Observed no inspection report displayed for public view in the lobby or drive thru window. CA: discussed with PIC. The current report will be posted upon receipt.

Observed lid and interior of bulk ice machine not cleaned at a frequency necessary to maintain food contact surfaces clean to sight and touch. CA: Instructed PIC to increase the cleaning frequency of the ice machine and to have employees detail clean the front edge of the interior.

Observed scoop in bulk seasoning container stored with the handle directly touching the food. CA: PIC immediately moved the scoop so the handle was up and out of the food.
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple plastic containers stacked together while still wet on the drying racks next to the 3 compartment sink. CA: Instructed PIC that all dishes must be completely air dried before being stacked together. PIC immediately rearranged the containers to promote air drying.
