Observed can opener and holster for it not cleaned at a frequency to maintain cleanliness to sight and touch. CA: PIC will up the cleaning frequency

Observed gallon of milk in reach-in cooler with expiration date of 9/6/24. CA: PIC discarded milk

Observed all potentially hazardous TCS foods in the reach-in cooler (sour cream, shredded mozzarella, French onion dip) improperly cold holding above 41 degrees Fahrenheit (see temp lol). CA: Discussed with PIC. Foods were out of temperature for an unknown amount of time and were discarded. Thermostat was adjusted; discussed putting internal thermometers inside of all coolers.

Observed food service employees unable to demonstrate knowledge of key public health risk factors that directly relate to their role in the facility (cooling times/temperatures, reheating for hot holding, cold holding temperatures, proper separation of raw and fully cooked/ready-to-eat foods, date marking TCS foods, hand sink requirements). CA: all employees to be retrained.

Observed no employee that is certified as a food safety manager. Facility prepares raw meat, cools and reheats TCS foods and is considered a risk type 2. CA: An employee that has supervisory control over the kitchen will become become food safety manager certified with him 60 days. CFSM is responsible for training food service employees.
