Observed wet wiping cloths air drying at 3-compartment sink. CA: Instructed PIC to place wet wiping cloths inside of sanitizer bucket. Wet wiping cloths must be stored in sanitizer solution in between uses.

Observed improper separation of raw seafood and meat in the cooler drawers; raw strips of fajita beef (minimum internal cook temp 155F) had fallen into a pan of raw shrimp (minimum internal cook temp 145F). CA: PIC chose to discard shrimp.

Observed potentially hazardous TCS foods improperly cold holding above 41 degrees Fahrenheit in the bar reach-in (pineapple juice, orange juice, bloody mary mix, margarita mix, mojito mix) and prep top cooler (ranchera sauce, sour cream, Hawaiian salsa); see temp log. CA: Discussed with PIC. Sour cream had been out of temperature for less than 4 hours and was moved to rapidly cool. All other foods discarded. In the prep top cooler, discussed stored tall sauce bottles in the reach-in portion. Bar reach-in cooler is new and unsure if it's NSF and health department never verified new unit. Unit needs to be repaired or replaced and will not be used for TCS foods until re-checked by the health department.
