Observed potentially hazardous TCS foods improperly cold holding in WIC. CA: All TCS foods being cold held must be at 41 degrees F or below. COS: PIC uncovered pans of BBQ pork and cream corn to rapidly cool in WIC.

Observed several potentially hazardous TCS foods improperly hot holding in FFS warmer cabinet. CA: All TCS foods being hot held must be held at 135 degrees F or above. COS: Sausage biscuits, chicken biscuits, steak biscuits, sausage-egg-cheese biscuit were all discarded as they had been out of temp for 4 hours.

Observed customer come behind service counter and scoop ice into cup from bulk ice chest, then access FFS RIC to pour sweet tea from open top pitcher stored in cooler. CA: No unauthorized personnel may access kitchen or equipment.

Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed bottle of floor cleaner stored on 3-compartment sink; observed cans of bug repellent stored above chest freezer. CA: All toxic substances must be stored in order to prevent contamination of food or equipment. COS: PIC relocated all toxic substances to proper area.

Observed ice in direct contact with RTE foods (tomatoes). CA: Ice may not be in direct contact with food. COS: PIC removed ice from direct contact with food. Made ice bath and rewashed tomatoes.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloths stored on food storage cart, and on stove storage shelf. CA: All wiping cloths must be stored fully submerged in sanitizer solution or as dirty or clean linen. COS: PIC placed wiping cloths in sanitizer solution buckets.

Observed opening to rear door with large hole in bottom corner. CA: All exterior openings must be protected to prevent pests.
