6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed time/temperature control for safety food being held at greater than 41 degrees F in the walk-in cooler located in the main kitchen. Foods discarded were the pinto beans, raw chicken, bologna and already made bologna sandwiches that were made for dinner. Ham and eggs cooling were moved to the walk-in freezer to finish cooling process. COS: Door to freezer was opened and walk-in cooler temp dropped to 37 degrees prior to leaving inspection. Repairman also showed up and was working on cooler prior to leaving. The chicken and bologna left in cooler was frozen and under the thawing process.
