Observed no chemical test kit provided when using chemical sanitizer at three-compartment sink/wiping cloths. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Chlorine sanitizer test strips shall be obtained.

Observed build-up of dust and grease on nonfood-contact surface of vent hood. Vent hood area shall be thoroughly cleaned. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed no suitable thermometer provided or readily accessible to measure the internal temperatures of food product. Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures. Thermometer shall be obtained. Owner stated she broke her thermometer and will obtained a new one day.

Observed no proper chemical test kit provided for measuring the concentration of the sanitizer solution used for wiping cloths or chemical sanitizer at three compartment sink. Owner stated she ordered sanitizer test strips during todays inspection and will send a picture when they arrive.

Observed wet wiping cloth on food prep table not stored in chemical sanitizer. COS: Cloth placed in sanitizer. Wiping cloths shall be stored in chemical sanitizer when not in use.
