2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
While normal operation, EHS observed a male employee move between the chicken battering station , dropping the chicken in the fryer, and pulling the chicken up from the fryer; while in this process, the employee removed their glove to pull the chicken up but did not wash their hands and don new gloves when returning to the battering station. Additionally, EHS observed a male employee transition from boxing up food items to dropping frozen okra in the fryer then returning to boxing food; while in this process, the employee did not wash their hands while moving between actions.
511-6-1.03(5)(c) - When to Wash (P) (c) When to Wash.
- Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles P and:
(i) After touching bare human body parts other than clean hands and clean, exposed arms; P
(ii) After using the toilet room; P
(iii) After caring for or handling service animals or aquatic animals; P
(iv) After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco products or electronic devices that simulate tobacco smoking, eating or drinking, except for drinking from a closed beverage container and the container is handled to prevent contamination of the hands;P
(v) After handling soiled equipment or utensils; P
(vi) During food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks; P
(vii) When switching between working with raw food and working with ready-to-eat food; P
(viii) Before donning gloves to initiate a task that involves working with food; P and
(ix) After engaging in other activities that contaminate the hands. P
CA: EHS advised the PIC to remind employees that thy must wash their hands when moving between work tasks which involve raw foods and ready to eat foods.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
EHS observed the build-up of grease on the exterior of the used grease storage and spilling of grease over the storage unit to the asphalt surface and parking lot. Additionally, the exterior portion of the condensate line from the WIC was observed to be damaged and draining directly to the side of the building.
511-6-1.06(4)(h),(i) - Approved Sewage Disposal; System; Other Liquid Wastes and Rainwater (P) (C) (i) Other Liquid Wastes and Rainwater. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law.
CA: EHS advised the PIC that the current grease build-up should be cleaned and the areas of the parking lot affected by the grease should be cleaned and an absorbent material applied to soak up the oil. Additionally, the condensate line is to be repaired so that it discharges properly.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
EHS observed no inspection displayed for public view in the waiting/ order area or at the drive through window.

The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.

Food service establishments with drive-thru windows will post the current inspection report, and also have the inspection report posted so that a minimum of the top one-third of a copy of the current inspection report is visible through each window allowing customers to easily read the score, date of inspection and establishment information.
CA: EHS advised the PIC that the inspection report must be displayed for public view at all times. The inspection resulting from today's inspection is to be posted once recieved.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
EHS observed an accumulation of grease/ grime build-up on non-food contact surfaces in the dishwashing areas, floors, and walls. Additionally, the apparent rusting of shelving in the WIC.

CA: EHS advised the PIC that routine cleaning frequency needs to be increased and special attention placed on current areas with excessive build up.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
EHS observed the following throughout the kitchen and facility: cracked and/or missing floor tiles; damaged or missing coving surrounding the walls; missing ventilation cover; discolored/ soiled ceiling tiles.

The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
CA: EHS advised the PIC that action must be taken to repair the noted areas not in good repair and/or soiled/ discolored.
17C - physical facilities installed, maintained, and clean

EHS observed the ceiling in the restrooms to have an active leak and to be in-need of repair.

CA: PIC provided work order to repair facility roof; however, EHS advised the PIC that the leak observed in the RR's must be repaired as soon as possible.
