CA-PIC needs to make sure that hot holding units are being cleaned routinely to reduce food debris being inside of the unit.

Observed food debris under steamer on serving line. EHS also observed food debris in warming cabinet that stores fiesta potatoes and rolled chicken tacos. EHS also observed food debris where scale is stored on serving line. All observations were in main kitchen are at the serving line.
