14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed containers that were wet-stacked on the drying rack above the 3C sink. 2. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:
(i) In a self-draining position that allows air drying; and
(ii) Covered or inverted.EHS informed the PIC that all equipment is to drain dry before stacking. PIC is to re-wash containers and allow them to air dry.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed cardboard used to line the bottom of damaged cabinets near the drink machine. 1. Single-service and single-use articles may not be reused. EHS informed the PIC that all containers and boxes are to be discarded once the product is removed.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged inner bottom cabinetry near drink machine. (5) Maintenance and Operation.
(a) Good Repair. All physical facilities shall be maintained in good repair. EHS informed the PIC of the need to repair the area; PIC stated that the owners have work orders in place for a lot of things.
