Observed ambient air of the prep top cooler across from the broiler at 50-55F. 3. Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.PIC contacted servicing company to look at the unit. PIC is aware not to place items in the unit until it can maintain temperature. Pike's Peak Performance arrived to service the prep top cooler unit and PIC informed technician to check the new broiler while EHS was on-site due to the unit pushing out excessive heat.
