EHS observed bulk storage container of unknown powder in dry storage area. PIC states bacon. No label present.

Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

EHS observed:
-ice buildup in WIF on exterior of packages, grates. -rust buildup on grates in WIC/WIF -buildup of dust, grease on cables descending from ceiling in main line -labels on exterior of pans stored on dry storage rack
Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

-moulding for FRP in main grill line peeling away, cracked.
All physical facilities shall be maintained in good repair.
