EHS observed:

-cracked, chipping bins, carafes, utensils stored as clean in dry storage of primary prep area, warewashing, primary dry storage.

Utensils and equipment shall be maintained in a state of repair.

PIC discarded named items. PIC to maintain.

EHS observed:

Buildup of ice/condensate on exterior surfaces of WIF closest to loading dock area.

Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

PIC to clean area more regularly, instruct employees to maintain.

EHS observed scoop for scrambled eggs stored with handle touching food in tray.

stic pitcher being used as a scoop with the handle directly in the sugar. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon.

PIC removed scoop, discarded food.

EHS observed:

• Dripping fire suppression system in WIF ceiling.

• damaged gasket on warming cabinet in back of facility main kitchen.

All equipment must be in be in good repair.

PIC to replace/repair. PIC placed work order for repairs on named items.

EHS observed damaged rims of approx. 12 service pitchers stored in drying racks.

Utensils shall be maintained in a state of repair.

PIC discarded pitchers on site.

EHS observed:

• debris in bottom of RIC at front food service.

• stained exterior flashing of RIC at front food service facing register.

• stained/dusty fan backing of line facing bulk-order soup pots.

Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

PIC had employees replace fan casing; PIC to clean affected RIC.
