Observed ice in the handsink in the main kitchen area across from the bulk ice machine. Handsinks may only be used for the purpose of handwashing. PIC spoke to staff about the usage of handsinks. Ice to be cleaned.

Observed access to handsink in the dish pit area blocked by two carts. At all times, handsinks must be fully accessible for handwashing. PIC removed carts so that handsinks were accessible.

Observed clear bowls and 2-quart containers stacked while still wet in the dish pit area. All cleaned utensils must be allowed to be properly air dried. PIC started separating containers so that items can be properly air dried.

EHS observed shell eggs and butter at 44F in walk in cooler. PIC stated that walk in cooler had been turned off while they were putting up this morning delivery which had arrived prior to EHS arrival. Violation: TCS foods shall be maintained at 41F or below when cold holding. CA: walk in cooler was turned on and temperatures rechecked at end of inspection and products were cooling. Do not turn off units to put up deliveries.

Violation: Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Inspector note: EHS observed three dented cans in storage. Corrective action: PIC placed cans in dented can area to be discarded. Employees properly discarded before EHS departure.
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Violation: 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Inspector note: EHS observed air receiving vents in the main kitchen area with mold and dust accumulation. EHS observed ceiling tiles in the storage area with visible water damage. Corrective action: PIC informed EHS that they have let the maintenance know of needs for air receiving vents to be cleaned and storage ceiling tile replacement.
