6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
EHS observed:
-meatballs in marinara in hot wells at 65F.
All foods held for hot holding must be held at or above 135F.
PIC discarded meatballs.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
EHS observes inspection report that is not current posted at facility at time of inspection.
The most current inspection report shall be prominently displayed in public view at all times,
PIC to obtain, post most recent report.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
EHS observes:
-cutting board attached to BOH slicer with scarring, black buildup -FOH cutting boards in front of prep tops with scarring, black buildup
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.
PIC to replace/repair.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
EHS observed:
-damaged steam table unit for meatball hot holding nonfunctional. Employee states due to short in system.
Equipment shall be maintained in a state of repair.
PIC to replace or repair.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
EHS observed:
-buildup of food debris, syrup spills in front food service soda fountain cabinet.
Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
PIC to have areas cleaned.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
EHS observed personal items as follows:
- cups/tumblers set next to deli slicer.
- gatorade bottle, frozen, inside rack on RIF above customer product.
- personal phones sitting on single service item rack
Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions.
PIC to designate and maintain an area for employee items.
