Observed a container of raw burger residual (water run off from thawed meat) sitting above an open box of margarine on the prep table. Dripping from the container appeared to have gotten on the margarine beneath. CA: Food shall be protected from cross contamination by: (i)Except as specified in paragraph (i)(IV) of this subsection, separating raw animal foods during storage, preparation, holding, and display from: (I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables,P and (II)Cooked ready-to-eat food;P and (III)Fruits and vegetables before they are washed (ii)Except when combined as ingredients, separating types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage, preparation, holding, and display by: (I)Using separate equipment for each type,P or (II)Arranging each type of food in equipment so that cross contamination of one type with another is prevented,P and (III)Preparing each type of food at different times or in separate areas; or through storing them in covered containers, packages, or wrappings.

Observed trash littered on the ground around and behind the dumpsters in the refuse area. CA: Refuse and refuse areas shall be cleaned and removed in a frequency to minimize odors and reduce the presence of pest. Clean and correct within 72 hours.

Lid to one of the outside trash cans was ripped off and laying on the ground behind the trash can. Outside receptacles must be covered at all times to deter pests. CA: School Administration was made aware of the issue. Contact the city to have a the damaged dumpster replaced. Correct within a week.

Observed lettuce and chopped eggs in the teachers serving line at temperatures above 50F. Eggs and salad were prepped that morning and never properly cooled to 41F prior to service and were assumed to be cold holding by staff. TCS food that is cold holding must be cooled back to 41F prior to serving. COS: CFSM voluntarily discarded items.

Observed handwash sink beside 3-comp sink without adequate water pressure or temperature to run. Plumbing shall be maintained in good repair. CA: CFSM has part order in and maintenance will repair ASAP.

Observed handwash sink in the 3-comp dish sink area without hot water. Handwash sinks shall be equipped to provide tempered water at a temperature of 100F. CA: Place Do Not Use Sign on sink and direct staff to other handwash sink with hot water; call maintenance to fix handwash sink.
