Observed sliced cheese sitting on an ice bath at at 62 degrees Fahrenheit. The cheese was sitting on a stack of 3 styrofoam plates that were the only thing in direct contact with the ice not allowing for heat to transfer efficiently. CA: Time/temperature control for safety food being cold held must maintained at a temperature of 41 degrees Fahrenheit or below. COS: Cheese had only been out for a little over an hour. It was placed back into the working walk in cooler to cool back to proper temperature. Cheese should be placed in a metal container that is more thermally conductive and then the metal container placed into the ice bath wih the ice covering the sides of the container for further serving of the cheese in this manner.

Observed butter labeled "perishable keep refrigerated" sitting out on the counter top at 71F since early that morning. TCS food that is being cold held must be kept at a temperature of 41F or below. CA Discarded food as it had been sitting out over 4 hours out of temperature control.
