6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
observed one of walk in coolers in kitchen out of order almost all perishable food items removed and placed in other cooler. butter found still in malfunctioning unit at >41 degrees F. cos-removed and disposed of at time of inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
observed mold-like substance on dispensing nozzles at drink machine in kitchen. cos-removed and cleaned. observed washrag sitting on counter. cos-removed and placed in sanitizing bucket. observed 4/5 sanitizing buckets with around 100 ppm quat sanitizing concentration. cos-dumped out and refilled with new sanitizing agent at proper sanitation levels.
