At time of inspection, observed sliced tomatoes in prep-top cooler that registered at 49° F with a thermometer. Date-marking label showed (and PIC confirmed) they were sliced and placed in cold-holding on 11/26/2023 (four days ago). COS: PIC discarded the tomatoes. Other items at the back of the cooler were within acceptable cold-holding temperature threshold of 41° F or below (lettuce registered at 38.5° F). CA: PIC states the lid of the prep-top cooler had been left open for a period while preparing burgers for service. Due to proximity of prep-top cooler to the grill, PIC states that could have caused the temp. of tomatoes to rise with the lid open for extended period. PIC states she will ensure that the lid stays closed when possible.
