4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
At time of inspection, observed multiple foods stored uncovered in the reach-in cooler in the kitchen. COS: PIC covered all exposed items with cling wrap. When not in active use, all foods must remain covered.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
At time of inspection, the Ecolab dispenser for the sanitizer in the 3-compartment sink is not functioning. CA: PIC states he will contact Ecolab to come out to repair/replace the dispenser. Instructed PIC to manually add sanitizer and water to sanitize dishes/equipment, until the dispenser has been repaired/replaced.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
At time of inspection, observed a bowl being used as a scoop in a bulk bin of sugar in the dry storage area. COS: PIC removed the bowl. A scoop with a designated handle must be used, to prevent contamination of food products.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
At time of inspection, observed a strainer with a handle being stored underneath the handwashing sink, with the strainer basket resting on the drain pipe of the handwashing sink. COS: PIC moved the strainer to be cleaned/sanitized. All utensils must be stored in a clean, dry location.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
At time of inspection, observed damaged wall corner, exposing metal underneath drywall. Repair to create smooth, easily cleanable surface.
