Routine

Score: 952 violations

6-2 - proper date marking and disposition

Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)

4 ptsCorrected: YesRepeat: No

At time of inspection, observed a container labeled "spicy cream cheese" (house-made) in the walk-in cooler, bearing a date label stating "11/29." It is believed by the PIC that "11/29" may have been the date it was frozen, before being placed in the walk-in cooler, but PIC is unsure. COS: PIC discarded the cream cheese. PIC will ensure that foods are properly date-labeled to discard within 7 days, for all TCS foods.

15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)

1 ptsCorrected: NoRepeat: No

At time of inspection, observed the handle of the reach-in freezer (in the grill area) is broken and has been taped over. Equipment must be kept in a state of repair that allows smooth, cleanable surfaces (handle cannot be cleaned properly, when taped over). Repair/replace the handle.

4-2B - food-contact surfaces: cleaned & sanitized

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)

4 ptsCorrected: NoRepeat: Yes

At time of inspection, could not detect any concentration of sanitizer on dishes after cycle completed (PIC ran several cycles to verify - PIC also used their test strips to verify). PIC will contact Cheney Bros to return and troubleshoot the issue. Until such time that warewashing machine is capable of properly sanitizing dishes/equipment, use 3-compartment sink to wash, rinse, and sanitize all dishes/utensils/equipment.
